EFFECT OF DISTILLATION TEMPERATURE AND STAGE OF CONDENSER ON SENSORY CHARACTERISTIC OF LIQUID SMOKE DISTILLATE
Modification of liquid smoke distillation equipment by constructing three condenser stages is aiming to prevent carry over of benzo[a]pyren and tar during the process. This modification is estimated affecting sensory characteristic of each liquid smoke distillate fraction. Hence, the purpose of this research is investigating the effect of distillation temperature as wll as condenser stage on sensory characteristic of each fraction. The distillation process is conducted on temperature 90-100oC, 100-110oC, and 110-120oC. Distillate is produced in four parts (pre-condensasation, stage 1, stage 2, and stage 3). The The result of this research shows that each distillate fraction has different chemical and sensory characteristic.
